Glutenfritt danskt bröd

Serious? JA! Ett riktigt jävla gott bröd. Någon som hört talas om Danskt bröd? Det är ett bröd med massa vetemjöl och sånt jag inte kan äta tyvärr. Lyckades göra ett liknande 100% GLUTENFRITT! Lyckan? Den är mega stor

// Serious? YES! A really fucking good bread. Anyone heard of Danish bread? It’s a bread with a lot of wheat flour and things I can not eat, unfortunately. Managed to make a similar 100% GLUTEN FREE! Happiness? It’s mega huge!

Gjorde två blandningar. I ena skålen – de blöta, och i den andra de torra. Gojsade sedan ihop allt och la det på jäsning i en brödform. // Made two mixes. In one bowl – the wet ones, and in the other the dry ones. Then greased everything together and put it to ferment in a loaf pan.

Såhär fint hade det jäst efter cirka 80 minuter! // So here it has fermented after about 80 minutes!

In i ugnen i 60 minuter. Dofterna! My Lord! // Put in the oven for 60 minutes. The scents! My Lord!

Låt det svalna. Jag vet. Det kan vara en smärtsam lång stund om sugen verkligen är där och då men det är värt. Jag lovar. // Let it cool. I know. It can be a painful long moment if the craving is really there and then but it’s worth it. I promise.

På med smör och njut // On with butter and enjoy

What you need:

6 1/2 dl fingervarmt vatten // 6 1/2 dl finger-warm water
2 dl rivet äpple // 2 dl grated apple
1 msk honung // 1 tablespoon honey
1 dl pumpakärnor // 1 dl pumpkin seeds
1 1/2 dl solrosfrön // 1 1/2 dl sunflower seeds
1 dl linfrön // 1 dl flax seeds
brödkryddor // bread spices
1 1/2 msk psyllium // 1 1/2 tbsp psyllium
2 1/2 dl mörkt teffmjöl // 2 1/2 dl dark teff flour
2 1/2 dl durramjöl // 2 1/2 dl sorghum flour
2 tsk salt // 2 teaspoons salt

How To:

Vispa ihop vatten, jäst, äpple och honung i en bunke.
Mät upp och blanda alla torra ingredienser för sig.
Tillsätt de torra ingredienserna till degvätskan och vispa hastigt ihop till en jämn smet. Det blir en väldigt klibbig smet. Men det är korrekt! Låt smeten stå och svälla i ca 10 minuter.
Klicka i smeten i en brödform och pudra med rismjöl över ytan.
Låt degen jäsa i formen i ca 75 minuter.
Baka brödet i ca 60 minuter långt ner i ugnen.
Ta ur brödet ur formen och låt svalna helt.


Whisk together water, yeast, apple, and honey in a bowl.
Measure out and mix all dry ingredients separately.
Add the dry ingredients to the dough liquid and whisk quickly to a smooth batter. It becomes a very sticky batter. But that’s correct! Let the batter stand and swell for about 10 minutes.
Click the batter into a loaf pan and dust with rice flour over the surface.
Let the dough rise in the mold for about 75 minutes.
Bake the bread for about 60 minutes deep in the oven.
Take the bread out of the mold and let it cool completely.

Today I ate brunch with one of my best friends who also has t1. She told me that it has been a journey with different diets, rigid approaches and exciting development of diabetes “tools”. "Everything was worse before, even life-threatening"

When she got diabetes she read in a children's book that a person with type 1 diabetes does not live longer than 30 ... she decided at that moment to live life just as she wanted to. Eat food that she likes, travel and enjoy life!

Said and done. Today, 53 years later, she is feeling great and her diabetes does not stop her from continuing to live! That’s inspiring 💙

What a week! Completely thrilled, exhausted and excited! I am so honored to have been awarded a full #dedoc° voices scholarship! Yesterday we had the kick-off event which was so exciting. Looking forward to next weeks virtual #EASD2020 and #ISPAD2020
