Frallor utan mjöl, ägg och gluten

Jag hittade ett recept på pitabröd och blev så himla sugen på att testa. Detta är min version av ”pitabröd” som i slutet blev så himla goda frallor. De var super-enkla att göra och de blev ruggigt goda!

Ingredienser:

50 gram jäst
4 dl vatten
3 dl majsmjöl
2 dl rismjöl
2 dl majsstärkelse
3 tsk xantangummi
2 tsk salt
3 msk olivolja

Gör så här:

Blanda ihop alla torra ingredienser i en bunke. Lös upp jästen i vattnet och rör ner vätskan.
Arbeta ihop till en klibbig deg och tillsätt olivoljan.
Låt jäsa i ca 1 timma.
Sätt ugnen på 200 grader. Stansa ut ”runda” delar av degen, på ett bord med rismjöl, i den storlek du önskar. Det behövs mycket mjöl!

Grilla bröden i en torr stekpanna. Ca 30 sek på varje sida, tills de fått lite färg. När du stekt klart, lägg de på en plåt med bakplåtspapper.

Grädda bröden i ca 5 minuter. Detta är för att de ska bli färdiggräddade i mitten.

Låt svalna, skär upp och njut!

I found a recipe for ”pita-bread” and I was so eager to test and try my own version. This is my version of ”pita bread” which at the end became so deliciously good.

Ingredients:

50 grams of yeast
4 cups of water
3 cups of corn flour
2cups rice flour
2 cups corn starch
3 teaspoons ”xanthan gum”
2 teaspoons of salt
3 tablespoons olive oil

Do this:

Mix all the dry ingredients in a bowl. Dissolve the yeast in the water and stir the liquid.
Work together to a sticky dough and add the olive oil.
Ferment for about 1 hour.
Heat the oven to 200 degrees. Punch out ”round” parts of the dough, on a table with rice flour, in the size you desire. A lot of flour is needed!

Grill the breads in a dry frying pan. Approximately 30 sec on each side, until they get a little color. When cooked, place them on a plate with baking paper.Bake the bread for about 5 minutes. This is because they have to be finished in the middle.

Let cool, cut and enjoy!

I get a lot of questions why I run, expose myself to hard races and train when it is possible to sit down in a comfy sofa (😘)

I don’t have a good answer to it except that I want to be strong and a receipt that it is possible despite t1 diabetes.

Summer for me has in recent years not gotten the star shine it should.
2020 I got sepsis, got very sick and hospitalized all summer. Was discharged with a catheter for one kidney and thus half man half woman for a few months.
In 2021, I had surgery for what had caused my sepsis. Östling’s kidney.
In 2023 I had to cancel my vacation, go straight to the emergency room and hospitalized for more than 2 weeks due to an infection in the kidney that caused a lot of pain, tears and a resignation I didn’t think I could handle.

None of this is related to T1 diabetes and nothing I could have done differently to avoid.

Despite that, I was determined. Copenhagen Half Marathon 2023, Stockholm Marathon 2024, what’s next?

There are obviously more diseases than diabetes but life goes on and there are a lot of positives in life that you have to take advantage of 🫶🏻❤️
