Ciabatta – Glutenfri

Ricotta on is a must!
And some olive oil ofc 🙂

Vad du behöver // What you need

25 gram jäst // 25 grams of yeast
5 dl vatten // 5 dl water
2 msk olja //2 tbsp oil
salt // Salt
2 msk honung // 2 tbsp honey
2 dl havremjöl // 2 dl oatflour
3 dl rismjöl // 3 dl riceflour
1 dl majsmjöl // 1 dl cornflour
1 msk pofiber // 1 tbsp pofiber
2 msk psylliumhusk // 2 tbsp psylliumhusk

Gör så här // Do this

Blanda ut jästen i vattnet tills det löst upp sig. Blanda i olja, salt samt honung. Häll ner resterande ingredienser och blanda väl. 

Låt degen jäsa i 2-3 timmar. 

Sätt ugnen på 250 grader. Forma ungefär till ca 6 st ”bullar” med hjälp av majsmjöl och lägg på en plåt med bakplåtspapper. Grädda bullarna i ca 30-35 minuter beroende på ugn och storlek på dina bröd. 

Låt svalna innan du skär i brödet!

Mix the yeast in the water until it dissolves. Mix in oil, salt and honey. Pour in the remaining ingredients and mix well.

Let the dough rise for 2-3 hours.

Set the oven to 250 degrees. Shape 6 ”buns” using cornflour and place on a plate with baking paper. Bake for about 30-35 minutes depending on the oven and the size of your bread.

Let cool before cutting into the bread!

We all doubt ourselves from time to time and I know that diabetes isn’t helping. But I’m here for you and to be honest with you, I don’t have the best confidence. But it’s getting better!



When I was a younger, I refused to be a person in the spotlight. I didn’t like the feeling of knowing people were looking at me. Or, later on, I didn’t even tell my previous dates that I had diabetes. Not that I was ashamed of the fact that I had a chronically disease - I didn’t have the confidence to let another person see who I was.



It’s not easy to break a pattern that’s not healthy. But it’s not impossible. One thing that has helped me is to always remember that comparing myself to others - is bullshit. We don’t have all the information on other people’s life’s, so it’s impossible to compare “apples to apples” or blood sugar curves to blood sugar curves 💕
